day 6: {oreo truffles}

i have to be honest. after the past two days i feel like i need a major vacation. the final weeks of school are coming to an end and it’s crunch time {hence the Christmas cookie candle post yesterday}. and if you know me, you know one of the things i’m best at is procrastinating. therefore, the majority of my Monday was spent on a project that was due today, instead of making something yummy to share.

so, i apologize for my procrastination.

now, for today. how about some oreo truffles? i’m not a big fan of oreos on their own. however, these little balls of goodness, i am a huge fan of. they’re super easy and always a hit at holiday get togethers.

what you’ll need:

1 bag of oreo cookies, crushed

1 brick of cream cheese, softened

1 cup of white chocolate chips

1 teaspoon oil

directions:

place oreos in food processor and crush.

{if you don’t have a food processor you can just put them in a ziploc bag and go at them with a rolling pin}

place oreos and cream cheese in electric mixer and mix until combined.

chill for about 30 minutes to 1 hour.

roll into 1 inch balls and place on wax paper.

place white chocolate chips and oil in bowl and microwave on 50% power until smooth.

drizzle melted chocolate over oreo balls.

if you want you can dip oreo balls in the chocolate, but i like to drizzle.

allow chocolate to harden.

simple and tasty!

now, just a few little tips.

1.if you use double stuffed oreos only use about ¾ brick of cream cheese

2. if you want to mix it up a little add a little peppermint oil. or use mint oreos. or create whatever combination you think would be yummy.

  1. Bethany, are they supposed to be kind of sticky? I tried this recipe with Mint Oreos and I’m not sure if I did it right, even though I followed your directions perfectly…not sure if they’re OK though…thoughts?
